This is a beautiful easy to prepare cake in the form of an egg for Easter or any other holiday.
Irresistible and marvelous mixture of tender cake bits mixed with dried fruits and walnuts, formed into a tempting egg shape.
Ingredients: 8 servings
500 g of chocolate cake, prepared at home or bought, preferably pound cake
1 cup dried apricot (150 g)
½ cup water
3 tablespoons sugar
1 cup chopped walnuts
3 tablespoons apricot jam
1 cup finely chopped candid orange peel, (80 g) or any other candid fruit (see note below)
3 tablespoons orange juice
½ cup small chocolate bits to cover egg
1. Crumble cake by hand to very small pieces.
2. Place apricots in a pan with half the cup of water and sugar. Bring to boil and simmer till the water evaporates. Remove apricots and finely chop them.
3. Mix in a bowl all ingredients except chocolate bits and gather in the form of an egg then cover with the chocolate bits and tie with a ribbon as desired (the cake may be gathered into small balls and may be covered with colored dried coconut flakes).
N.B.: All ingredients except cake and chocolate pieces may be chopped in a food processor. White cake be used instead of chocolate cake and the whole egg may be covered with colored dried coconut flakes.
The egg cake does not cut well using a knife, using a spoon is preferable.
Candid orange peel may be prepared at home.
