Tuna Sandwich

Tuna SandwichTuna is available in cans and is delicious and healthy.

These are easy to prepare sandwiches, loved by young and old, and would fit any occasion.

 

 

Ingredients: 

To prepare 24 sandwiches

24 slices of pain de mie bread (tender toast bread) (see note below)

2 cans tuna, each 200 g

1 big onion (100 g), finely chopped

¼ cup cucumber pickles, finely chopped

7 tablespoons mayonnaise

1 tablespoon lemon juice

1 teaspoon mustard

Salt and freshly ground white pepper

Parsley stems for decoration

1. Drain tuna and place in a food processor with onion, cucumber pickle, mayonnaise, lemon juice, mustard, salt and white pepper.  Pulse ingredients till fine.

2. Refrigerate tuna mixture one hour or till thickened

3. Remove crust from bread slices and distribute tuna mixture on top of 12 of the slices, cover with the rest of the slices.

4. Cut each sandwich in the middle, place on a serving plate and garnish with parsley. 

(Sandwiches may be prepared a day before serving, refrigerate covered and bring to room temperature before serving).

N.B.:  To facilitate preparing the sandwiches:  Ask the bread shop to cut the bread horizontally to long slices instead of cutting it lengthwise into square slices.

Same filling may be used to prepare small open sandwiches.
