Rayya's Chicken with Cream

Ingredients:  4 servings

4 skinless chicken legs, each cut in half along the joint

2 cups beer (with or without alcohol)

1 cup water

1 teaspoon flour

¼ cup diced carrots

¼ cup diced celery stems

½ cup finely chopped onion

For sauce

1 cup sour cream or whipping cream

3 tablespoons mustard

¼ cup finely chopped parsley leaves

Salt, freshly ground white pepper

For garnish

1 teaspoon chopped parsley leaves

  1. To remove scum: place legs in a pot with water to cover and bring to a boil.  Simmer few seconds or till white foam collects on top.  Strain legs, wash and wash pot.
  2. Place the 1 cup water with beer and flour in a pot over medium heat and bring to a boil while stirring.  Add carrots, celery, onion, chicken legs and some salt and white pepper.
  3. Cover pot and simmer ingredients 20 minutes.  Remove cover and simmer about 20 minutes more or till chicken is cooked and sauce is reduced and about ½ cup is left.
  4. Remove legs and cover to keep hot.  Add to the pot the cream, mustard and chopped parsley and stir to mix.  Bring to a boil, add chicken and simmer few seconds.  Taste and adjust seasoning.
  5. Serve hot with pasta or with rice if desired.

To reduce calories:  Use skinless boneless chicken breasts instead of legs and cut each to half.  In this case use half the quantity of water and beer and simmer till breasts are cooked.  Use low fat whipping cream.
