A good party dish, low in calories and served with chicken-apple sauce.

Ingredients:  4 to 6 servings

500g skinless boneless turkey breast

1/3 cup yoghurt

1/3 cup breadcrumbs or ground (kaak)

Salt, ground white pepper

For the stuffing

1 medium onion, finely chopped

1 tablespoon vegetable oil

1 tablespoon butter

1 small apple, peeled and chopped into 1cm cubes

10 dry apricots cut into small cubes

¼ cup raisins

1 teaspoon dry sage or 1 tablespoon chopped fresh sage

Pinch ground clove

¼ cup chicken stock

Salt, ground white pepper

For sauce

1 small onion, finely chopped

1 tablespoon vegetable oil

1 small apple, peeled and cut into small cubes

1 cup chicken stock

1 teaspoon flour

1 teaspoon butter

1 teaspoon soy sauce

Salt if necessary, ground white pepper

Roasted Turkey Breast with Fruit Stuffing

1. Clean turkey breast by removing white tendons. Pound until breast is even in thickness, sprinkle with salt and pepper and place on work surface, skin side down.

2. Prepare stuffing, cool and spoon over turkey breasts.

3. Roll breast like a cigarette pushing stuffing towards the center and pressing down.

4. Brush turkey breast with yoghurt on all sides and dip in breadcrumbs or ground (kaak).

5. Place on an oiled wire rack placed on oven pan and pour half cup of water in the pan never letting breast touch water in pan (recipe may be prepared to this step a day before serving).

6. Bake turkey in a preheated175C° (350 F°) oven 30 minutes.

7. Remove breast from oven, cover and let rest ten minutes before cutting. Slice and serve warm with French fries or mashed potatoes and sauce on the side.

To prepare stuffing

Fry onion in oil over medium heat till cooked but not colored. Add chopped apples and stir-fry five minutes.

Add apricots, raisins, sage, pinch of ground cloves, chicken stock, salt and white pepper, cover pot and cook 2 to 3 minutes.

Uncover and cook stuffing until stock evaporates. Set aside to cool.

To prepare gravy

Fry onion in a tablespoon of vegetable oil until tender. Add in chopped apples and chicken stock and let boil.

Mix butter with flour. Add to boiling chicken stock mixture stirring constantly until ingredients boil and stock thickens. Add soy sauce and white pepper.

To reduce calories: For stuffing: do not fry onions, cook in little water until tender and water evaporate. Add remaining ingredients and boil until cooked.

For sauce

Cook onion as in stuffing, without frying. Thicken stock with 1 teaspoon cornflour mixed with 1 teaspoon water.
