Tender chicken in a spicy and sweet sauce is an easy and quick recipe from China.  It may be prepared in advance and reheated when needed.

Chinese Chicken with Apricot Jam

Ingredients:  4 servings

4 chicken legs

4 tablespoons apricot jam (see note below)

4 tablespoons soy sauce

¼ to ½ green chili pepper, finely chopped

2 garlic cloves, crushed

2 cm. ginger root, peeled, grated

1½ tablespoons mustard

½ cup water


1. Remove skin of chicken legs and discard; cut each leg in half along the joint.

2. Place legs in a pot with cold water to cover and bring to a boil. Simmer few seconds till scum rises to the top then drain and discard water.

3. Wash legs and place in a clean pot with the rest of the ingredients and bring to a boil.  Cover and cook on medium to low heat for 45 minutes or till tender.

4. Uncover pot and simmer ingredients till sauce thickens.

5 .Place chicken on a serving platter, garnish with green and red chilies and serve hot with rice on the side

N.B.:  For apricot jam with apricot pieces; place in a food processor and pulse till a fine paste is formed.

To reduce calories:  Use boneless skinless chicken breasts cut to big pieces instead of legs.  Use sugar reduced jam.  Use ¼ cup water in place of ½ cup and cook 15 to 20 minutes in uncovered pot stirring from time to time.
