Radish Salad

A refreshing salad usually served with the Lebanese fish dish Sayyadiyeh (Light fish with Cumin).

Radish saladIngredients:  6 servings

500 g long radish (round may be used)

¼ cup red wine vinegar

2 cups water

Salt

 

Mix vinegar with water and salt in a bowl.

Slice radish and add to the vinegar-water mixture. 

N.B.: Radish may be thickly grated and mixed with the sauce.


Tajen Sauce (Sesame Paste)

Thick sauce prepared with sesame paste and fried onion, usually served with Lebanese Sayyadiyeh or cold with Pita Bread as part of a Mezze.

Tajen SauceIngredients:  4 servings

4 onions sliced moon shape

2 tablespoons olive oil

1 cup water

½ cup sesame paste

¼ cup lemon juice

Salt and freshly ground white pepper

For garnish

1 teaspoon fried or grilled pine nuts

Dash ground hot chili pepper

Parsley sprig

Radish

1.Fry onion in olive oil in a pan over low heat till colored.

2. Add water to the onion, cover pan and cook onion 10 to 15 minutes.  Uncover pan and cook onion till half the liquid evaporates and onion is completely cooked.

3. Add sesame paste, lemon juice, salt and pepper and cook few minutes till oil out of sesame paste floats to the top. 

4. Spoon sauce to a serving platter and garnish with parsley, pine nuts, hot chili pepper and radish.  Serve warm with Sayyadiyeh or as part of a Mezze.
